What Do You Know About Juzkand?

Juzkand is one of the traditional delicacies, prepared by stuffing a special powder or walnut into certain dried fruits that are high in vitamins. However, the sugar content can be harmful for people with diabetes.

Interestingly, “joz” is an old local dialect term for walnut.

Juzkand is a tasty and nutritious snack usually prepared in the fall and often served at special gatherings, particularly during celebrations.

This delicacy is typically made using a local variety of apricot known as “alge” which has a sweet and sour taste. It’s considered one of the most expensive traditional Iranian snacks or sweets, but it can also be made from a variety of local fruits such as plums, figs, pear-quince, and Gonjuni pears.

How to Make Juzkand?

To make Juzkand, first, let the fruits sun-dry until semi-dry, then remove the core. Fill the middle with a special powder or half a walnut, then let it sun-dry again until completely dry. This snack is excellent for hiking and sports due to its high nutritional value.

Ingredients (as per taste and preference):

Dried apricots

Almond kernel

Sugar

Cardamom powder

Chickpea flour

Half-cut walnuts

To prepare Juzkand with dried apricots, peel a local variety of apricot called “alge”, then leave it in the sun for about three days until it becomes semi-dry. Make a small incision at the bottom of the fruit, remove the seed, and let it sun-dry for another day.

Fill the apricot with a mixture of half a walnut kernel, almond flour, sugar powder, and cardamom to suit your taste. Some regions also add chickpea flour to the mixture. Seal the apricot and let it dry in the sun for several more days until fully dried.

Store the Juzkand in an airtight container or in plastic wrap inside the refrigerator. They can last for approximately a year in the refrigerator.

Traditionally, after drying, the Juzkand are strung on a thread and hung from the ceiling in a cool, dark place for extended preservation.

Approximately, every 100 grams of Juzkand contains 525 calories, and additional calories come from sugar and other ingredients.
