Comparing Dried and Juicy Sour Cherries: Which One is Better?

Dried sour cherries have a longer shelf life and can be stored in a cool, dry place for up to two years. However, juicy sour cherries are more delicious but have a shorter shelf life, and therefore need to be consumed in a not so long period.
Both types of sour cherries, dried and juicy, have distinct characteristics and choosing between them depends on your personal preference.
Examining the Characteristics of Dried and Juicy Sour Cherries:
Dried Sour Cherry:
This type of dried fruit is dry and sticky due to the loss of moisture. In the process of drying the cherries, most of the water and moisture is lost and on average it has slightly less sugar than juicy sour cherries. Depending on the variety of the cherry, it might have a tarter taste than the juicy version.
Juicy Sour Cherry:
As the name implies, this type of cherry contains more moisture and has a softer texture. Juicy sour cherries are sweeter than dried sour cherries and might be more popular among some individuals.
Considering these differences, you can choose based on your personal preference which type you prefer.
Furthermore, each type of cherry has its own unique benefits. For instance, dried sour cherries are high in dietary fiber and can aid in improving digestion and reducing blood sugar levels. Similarly, juicy sour cherries are a rich source of vitamins and nutritious substances.
How to Make Dried Sour Cherries at Home:
To prepare dried cherries at home, you can follow these steps:
Use fresh and sour cherries. It is better to choose cherries that are not yet fully ripe and are dark orange in color. Wash the cherries and then dry them thoroughly. You can de-pit the cherries or dry them with the pits.
Drying Method:
Method 1: Using Drying Racks:
Place the cherries on drying racks and arrange the racks uniformly. Then, turn on the dryer and set the temperature to 60-70 degrees Celsius. The time needed for drying depends on the humidity and the thickness of the cherries. They are usually fully dried within 6 to 24 hours.
Method 2: Using an Oven:
Place the cherries uniformly on an oven tray and turn the oven on at a higher temperature (around 80-90 degrees Celsius) for about 4 to 6 hours. The time may vary depending on the type of oven and specific conditions.
After cooling, store the dried cherries in a suitable container: After fully dried, place the cherries in a suitable container that does not allow air to penetrate, and keep them in the refrigerator or in a cool, dry place for the longest possible storage period.
To make juicy cherries, you can follow this method:
Choose ripe cherries for this type of drying. Wash the cherries thoroughly and dry them. You can de-pit them using a cherry pitter or dry them with the pits. To prevent the cherries from sticking together, you should place them apart from each other to avoid capping. Add a suitable amount of salt to the cherries, add some water depending on the size of the cherries, and put it on heat until it boils. After the cherries have cooked a bit and their water has almost evaporated, remove it from the heat to cool, then pour it into a glass container and keep it in the refrigerator. You can also store it in the freezer for a longer period.
